Yellow Squash Hush Puppies
Are you looking for a way to use your yellow squash? Look no further! This recipe is a fun way to incorporate veggies and everyone will be sure to love it. I found myself with an abundance of yellow squash, so I decided to look for fun ways to use it. After viewing multiple recipes I settled on making squash hush puppies, unfortunately I did not have all the ingredients so I had to modify and create something new. Yellow Squash Hush Puppies
- 1/2 cup flour
- 1 cup yellow cornmeal
- ½ teaspoon baking powder
- ½ teaspoon black pepper, garlic powder, chili powder, and paprika
- 1 teaspoon kosher salt plus more for sprinkling when they come out of the oil
- 1/2 cup cheddar cheese
- 1 egg lightly beaten
- ½ cup a buttermilk
- 3 large yellow squash
- Oil for frying
- Chop ends off squash and cut in half. Place about a cup of water in a pot and place squash inside. Steam for about 10-12 mins until squash are tender enough to smash. *Tip you can also do this in the microwave for about 10-15 mins* Just cover the squash halfway with water and cook until tender. Make sure to drain the water before mashing them
- Mix the other ingredients together until well incorporated.
- Add the squash to the bowl and continue to mix together.
- Heat oil in a pot. The oil needs to be about 1 inch deep
- Drop tablespoon sized balls into the fryer. *Tip: Use a small icecream scoop* Fry until golden brown on each side about 3 mins.
- Remove from oil and salt lightly.
