Yellow Squash Hush Puppies

Are you looking for a way to use your yellow squash? Look no further! This recipe is a fun way to incorporate veggies and everyone will be sure to love it. I found myself with an abundance of yellow squash, so I decided to look for fun ways to use it. After viewing multiple recipes I settled on making squash hush puppies, unfortunately I did not have all the ingredients so I had to modify and create something new. Yellow Squash Hush Puppies  
  • 1/2 cup flour
  • 1 cup yellow cornmeal 
  • ½ teaspoon baking powder
  • ½ teaspoon black pepper, garlic powder, chili powder, and paprika 
  • 1 teaspoon kosher salt plus more for sprinkling when they come out of the oil 
  • 1/2 cup cheddar cheese
  • 1 egg lightly beaten 
  • ½ cup a buttermilk  
  • 3 large yellow squash 
  • Oil for frying 
  1. Chop ends off squash and cut in half. Place about a cup of water in a pot and place squash inside. Steam for about 10-12 mins until squash are tender enough to smash. *Tip you can also do this in the microwave for about 10-15 mins* Just cover the squash halfway with water and cook until tender. Make sure to drain the water before mashing them
  2. Mix the other ingredients together until well incorporated. 
  3. Add the squash to the bowl and continue to mix together. 
  4. Heat oil in a pot. The oil needs to be about 1 inch deep
  5. Drop tablespoon sized balls into the fryer. *Tip: Use a small icecream scoop* Fry until golden brown on each side about 3 mins. 
  6. Remove from oil and salt lightly. 
  7. Enjoy! 
*If you have corn you can also add corn to the mixture for texture. We had two corn on the cobs leftover from grilling and I added it to the mixture. Highly recommend doing this if you have it on hand.
