Fire Roasted Salsa
Texas and Tacos go hand in hand...it is one of the things I love about living in this great state! In my opinion, you can't have a taco without a yummy salsa. I like my salsa with just a bit of heat. I also love my salsa roasted. In this recipe I used Early Girl Tomatoes, Jalapenos and Fresno Peppers fresh from my garden. Check out this easy recipe below.
Ingredients:
- 2 lbs of vine ripe tomatoes
- 1 white onion cut in quarters
- 6 cloves of garlic (keep the peel on)
- 1 jalapeno
- 1 fresno chili
- Olive oil
- Salt and Pepper
- 1 cup of cilantro
Recipe
- Cut tomatoes in 1/2
- Cut onion in quarters
- Slice peppers in half length wise
- Place all the ingredients on a cookie sheet
- Drizzle with olive oil and lightly salt and pepper everything
- Broil on high for 8-15 mins until nice and roasted. Slightly blackened on the top
- Remove from the oven and let completely cool
- Peel the garlic
- Once cooled add all the ingredients including the cilantro to the blender
- Taste and add salt if needed
*Tip: Add the peppers in half increments then taste for spiciness
*Tip: Add lime juice for acid
