Stewed Okra

You know how some recipes just take you back to your childhood? Stewed okra is one of those recipes for me. I remember thinking okra was slimy. As I got a little bit older I realized how delicious okra can be if you just give it try. My grandmother would make stewed okra and I always loved watching her build the flavors. Low and slow was her motto for many recipes and I feel as though it holds true. This recipe does take time, but the result is a yummy side dish that can go with just about any protein. Okra also has many benefits such as being high in nutrients and containing beneficial antioxidants. It is a veggie you definitely want to add to your diet.  Here is my version of stewed okra:


Ingredients

  • 2lbs of fresh Okra (If you don't find it in the grocery I encourage you to check out local farmers markets. It is in season right now.)
  • 2 lbs of fresh tomatoes about 14 small to medium tomatoes ( I used a mixed of Heirloom and Early Girl tomatoes)  *You can also use canned tomatoes. Sub two 14.5 ounce Fire Roasted cans of tomatoes. 
  • 4-5 slices of bacon cut into small pieces. 
  • 1 yellow onion diced 
  • 3 minced garlic cloves
  • 1 jalapeno sliced in half
  • chicken broth 
  •  salt and pepper to taste 
Recipe:
  1.  Add bacon to a pot on medium heat.
  2. While the fat is rendering from the bacon, dice the onion and mince the garlic. Add it to the pot and cook it until onions are caramelized about 5 mins. 
  3. Dice the tomatoes. Be sure to add all the juice, seeds, and skin from the tomatoes to the pot. 
  4. Slice the okra into quarter inch circular slices and add to the pot. 
  5. Season generously with salt and pepper. 
  6. Add chicken broth until it just about covers the okra. 
  7. Put the lid on the okra turn your burner to medium low heat and let it work its magic. 
  8. After about 20 mins give the okra a stir. Add in the sliced jalapeno. This adds a touch of heat. Feel free to omit if you don't like heat. 
  9. Once the okra turns to a dark green color and becomes tender to the touch it is done. I generally cook my okra for about 30- 45 mins. 
  10. Taste the okra and make sure it is tender. Add any additional seasoning. 
  11. Serve on its own or over white rice. 




This is a very filling meal and will leave you extremely satisfied. Try it out and comment with your thoughts.

  1. Bill likes okra, but my mother used to make me eat it and it was always slimy. I have never eaten it since. She was raised on a farm in Alabama and loved mustard greens too. I like green beans and spinach, but I will try your method for Bill and have a taste.

    1. I hope that you like this version. The okra I purchased at the Peach Street Farmers Market was great. It was not as slimy as okra I've had in the past. I hope it comes out great and that Bill likes it as well!
