Taco Stuffed Patty Pan Squash
We love trying new vegetables which is why we love receiving vegetables weekly from a local farmer-Moonbow farms. I wrote about this wonderful door delivery service in previous blogs, but I haven't quite mentioned the amazing versatility it has brought me as a home cook. It allows me to take what's growing in my own garden and combine it with new and wonderful veggies they bring to me each week. These veggies add to week night meals and are fun to transform into beautiful new recipes. I had never heard of Patty Pan squash prior to these deliveries, but was very excited to give it a try. This recipe is a twist on stuffed bell peppers. Instead of using bell peppers I used the Patty Pan squash. Patty Pan squash can come in different colors and sizes. There is a wide variety of this squash. For today's recipe I used White Patty Pan squash also known as Scalloped squash. Here is the run down....
Ingredients:
4 medium White Patty Pan Squash
Olive Oil
Salt and Pepper
1 lb of ground beef/chuck
1 jalapeno diced
1 onion diced
2 cloves garlic minced
1 packet of taco seasoning
Cilantro to taste
White Cheddar Cheese for the topping
Sour Cream for topping
Salsa for topping (Check out my quick and delicious salsa recipe)
Recipe:
- Preheat oven to 425
First slice the tops off of the squash. Only cut off enough to expose the entierer. Drizzle the Patty Pan with olive oil and generously salt and pepper the tops.
Place the squash in the oven and roast for about 20 mins. The time may vary depending on the size of the squash and oven. Once the squash are tender to the touch-I use a fork to test- remove the squash from the oven.
While the squash are roasting drizzle some olive oil in a pan.
Add the onion to the pan and saute for about 5 mins. Add in the jalapeno and continue to saute. *This is a great time to add in any other veggies you would like. I added in a purple radish and one small potato. I needed to use the veggies so I threw them in to the stuffing.*
Once the veggies have softened add 1/2 of the taco seasoning packet. *I use the Trader Joe's tacos seasoning packet. It is a perfect combination. You can use whichever packet you'd like or make your own.
Cook the veggies and seasoning together for about 2 mins.
Add in the ground chuck and break up to combine with the veggies. Add the remaining seasoning packet and cook the beef until no longer pink.
Take a spoon and scoop out the center of the Patty Pan squash. Add the center of the squash to your beef and veggie mixture.
Continue cooking until everything has combined and the meat is no longer pink.
Scoop the mixture into the squash shells and top with white cheddar cheese.
Return to the oven and cook until the cheese has melted completely. Remove from oven and add whatever toppings you'd like.
