Lime Cantaloupe Rum Pops and Strawberry Cantaloupe Lemon Vodka Pops
Some days I just look in my fridge and think what items need to be used soon. That is truly how I found this recipe. When you have extra fruit and don't want it to go to waste you make Lime Cantaloupe Rum Pops and Strawberry Cantaloupe Lemon Vodka Pops.

After making the recipe above I decided to modify it with fruit and liquor that I enjoy. I love strawberries and I had some leftover after making strawberry jam. My favorite liquor is Vodka. I love that vodka can be added to most drinks without a strong over powering flavor. So, naturally I decided to make Strawberry Cantaloupe Lemon Vodka Pops. Here are the steps to my version:
Ingredients:
1/2 pint of fresh strawberries
1/2 a large cantaloupe
2 lemons (You will zest these lemons and use the juice.)
5 tablespoons of white sugar
3/4 cups Lemon Vodka (I use Deep Eddy's)
ZipPop bags (I purchased these. FroZip)
Blender
Recipe:
1. Cut the stems off the strawberries and add them to the blender.
2. Remove the rhind from the cantaloupe and cube it. Add it to the blender.
3. Add in the zest of a lemon. If you like it really lemony zest both lemons.
4. Squeeze in the the lemon juice from both lemons.
5. Blend it all together until smooth.
6. Pour into a bowl.
7. Add in 3/4 cup of Lemon Vodka
8. Add 5 tablespoons of sugar
9. Stir until combined and sugar has dissolved. Taste the mixture and decide if it needs more sugar. *If it is too strong for you add a little water to thin it out.
10. Pour the mixture into something easy to pour from. For example, my blender has a pointed side that makes pouring easier. So, I just poured it back into the blender.
11. Grab a cup that the funnel fits in nicely. Place the FroZip baggie in the cup and use the funnel to put in the mixture.
*DO NOT go pass the fill line
*I used a cup to help minimize the mess. It was nice to have something to hold the bag steady.
12. Repeat the process until you run out of the mixture.
13. Lay the baggies flat on a cookie sheet. Place the cookie sheet in the freezer. Freeze for at least 6 hours up to overnight. I froze mine overnight.
*Using a cookie sheet helps keep the baggies flat. They will freeze better this way.
14. After they have frozen put them in a freezer ziplock bag and store them in your freezer.
