Keto One Pan Zucchini Spaghetti

Today I am going to share with you a super easy and fairly quick Keto Zucchini Spaghetti recipe. I told myself that my blog would be easy to read and get straight to the point when it comes to recipes, but if you're interested in a little more check out my intro blog post and the life update blog post to learn a little bit more about me. Back to the recipe. Here it is so simple, but so delicious! 

Ingredients

  • 1/2 a jar Rao's Marinara sauce (this is the lowest carb sauce I could find) 
  • Zucchini Spirals (you can buy a bag of these frozen from Costco they are great!) 

  • 1/2 cup Ricotta Cheese 
  • 1 cup Mozzarella Cheese 
  • 1 pound Italian Sausage 
  • 1 pound Ground Chuck  80/20 
  • 1/2 onion chopped
  • Italian Seasoning 
  • 2 cloves garlic minced
  • Salt and Pepper
  • 1/2 tablespoon Veggie Oil 
Recipe 
Heat a large cast iron skillet or oven proof pan. Once hot add 1/2 tablespoon of oil. Add the onion and saute until fragrant, then add in the garlic. After about one minute add in all the meat. Season generously with salt, pepper and italian seasoning. Break the meat up throughout and cook until no longer pink. Taste along the way and adjust to your liking. Use a large bowl and heat proof colander to drain the grease from the meat. Place the bowl of meat to the side. Add the zucchini spirals to the pan and cook until tender. If using fresh zucchini toss in a little butter. Remove the zucchini spirals and start layering all the components. Start with 1/4 cup of Rao's sauce. Then add a 1/4 of the meat mixture, followed by a few dollops of ricotta and a few spirals of zucchini. Lastly add a nice helping of mozzarella. This is the ooey gooey cheesy component. Don't skip out. Repeat the process until you no longer have any mixture. I was able to make two layers. Top the pan with Mozzarella and place in the oven for 10 minutes at 375. Remove, let cool, and enjoy. 

The carb count on my version of this dish was 30 carbs total, but only 5 net carbs per serving! This was incredibly filling. I hope you enjoy this low carb options for spaghetti. Don't forget to comment and let me know how your dish came out.

  1. I have lost 17 pounds since 1/1, and am trying to lose another 40 pounds before the Holidays. (2022 is my 50th reunion, and perhaps maybe possibly I'll be mother-of-the-groom.... Billy & Jesse are not formally engaged.) This past week I have started using an app to track calories. This recipe sounds yummy. Do you know how many calories are in a serving?
